The Sulcis district, situated to the south west of Cagliari, is characterised
by two particular climatic areas, which are determining factors in the
region's vine cultivation tradition:
- the internal areas enjoy a moderate, warm climate with modest annual
rainfall;
- the coastal areas enjoy a subtropical climate with limited rainfall.
The soil in these parts is also particularly interesting and plays an
important role in determining the types of vines which are more diffusely
cultivated.
The sandy soil in the coastal areas favours free standing vines and
the cultivation of the extraordinary Carignano grape, which has exceptional
organochemical and organoleptic characteristics, superior to the other
grapes produced in the region.
From this vine we get the famous Carignano
del Sulcis wine:
Organoleptic characteristics:
Colour: deep ruby red, tending to
burgundy.
Bouquet: intense, fruity with a hint
of blackberries, black currents and raspberries.
Flavour: dry, sapid, slightly tannic,
warm, full-bodied and smooth. Balanced, intense, persistent flavour.
Age: this wine should be drunk at a
moderate age.
Alcohol content: 11.5% vol.
Serving temperature: 18-20°.
The Carignano del Sulcis wine is the perfect complement
for various dishes: the young wine is ideal for first courses
of pasta served with meat sauces and different stewed meats.
The more mature wine is ideal with pork, grilled red meat, game, braised
meat and mature sheep's cheese.
